Pecan, Apple, Date + Maple Syrup Spiced Overnight Oats

Overnight oats recipes are easily adaptable as you can add any fruits, syrups or nuts of your choice for a perfect healthy breakfast. I used Granny Smith apples because they are citrusy, crisp and tart, making them a perfect pairing for the rich nutty and creamy flavours of the pecans, blue milk and coconut yoghurt.

I advise you slightly roast the nuts in the oven for 5 minutes or on the hob to activate those essential oils, intensify the deep caramel flavours of pecans and tone down the bitter flavours. You serve hot or cold, this particular overnight oats recipe is served cold.

Ingredients

50g rolled oats

1/4 tsp. cinnamon

100ml blue milk

2 tbsp. coconut yoghurt (any yoghurt of your choice)

1 tbsp. pecans (any nuts of your choice)

1 granny Smith apple

2 dates (pitted and chopped)

Sea salt (pinch)

Method

The night before serving stir the cinnamon and 100ml blue milk (or water) into your oats with a pinch of sea salt. Cover and keep in the fridge overnight.

The following day add the yoghurt and stir, loosen with a little more water (or milk) if needed. Top with nuts, dates, apple and a drizzle of maple syrup.
