Baked Nectarines with Coconut Yoghurt + Passion Fruit

Baking nectarines brings out their natural sweetness. This nectarine and vanilla coconut yoghurt combination is the perfect way to add more fruit to your diet during the colder months. You can also top this gooey caramel nectarine with your favourite ice-cream to transform it into a quick fix midweek pudding.

This recipe uses coconut sugar, however, like most recipes on Pot Twist you can make substitutions where appropriate.

Ingredients

3 nectarines

3 tbsp. coconut sugar

Vanilla Coconut yoghurt

Method

Heat the oven to 180°C

Slice your nectarines in half and take out the stone (you can segment the fruit or leave them in halves).

Lay them in a dish and scatter with coconut sugar and cinnamon. Add vanilla if you wish.

Bake nectarines until tender and have a deep caramel layer on top, about 20 minutes.

Serve with vanilla coconut yoghurt and pour the caramel juices on the yoghurt.
