Smashed Avocado Dip
This dip is a perfect addition to any salad bowl or to enjoy with some plantain crisps. This dip is a delicious addition to your breakfast, lunch, snack or dinner.
Ingredients
2 ripe avocados de-stoned (small to medium size)
1 lemon/ lime zest and juice
½ small garlic clove, finely grated
Sea salt
Black pepper (pinch)
Extra virgin olive oil
A handful of fresh coriander chopped (optional)
Method
Place the avocado in a bowl and add the garlic, lemon or lime juice, coriander, salt, black pepper and a drizzle of extra virgin olive oil. Mash with a fork or in a blender to the desired consistency. It can be as chunky or smooth as you like.
If you would like a thinner dip, add water in 1-2 tablespoons until it reaches your desired consistency.
Taste, and add more seasoning if it is not quite flavourful enough.
Transfer the dip to a small serving bowl.
This sauce keeps well in the refrigerator for about 3 days.
Serve on toast or as a dip with plantain crisps.
