Cracking Coleslaw
Always a crowd-pleaser. I have always wondered why people love it so, once you try this version you will understand. The secret to a cracking coleslaw is the fresh tomatoes, herbs and homemade mayonnaise. Every African event will most certainly serve coleslaw, and I have had the pleasure of tasting many variations of this much-loved salad.
Ingredients
· ¼ small white cabbage
· 1 red onion
· 2 large carrots peeled
· 2 ripe fresh tomatoes chopped
· 2 tbsp sea salt flakes
· 1 tsp chopped fresh dill
· 1 tbsp chopped fresh flatleaf parsley
· Homemade mayonnaise
Method
1. Finely slice the white cabbage, red onion, julienne or grate the carrots, parsley, dill, and place into a large mixing bowl. Mix thoroughly.
2. Fold in as much mayonnaise as you like, you may not need it all. Mix together and serve. The coleslaw will keep in the fridge for up to 3 days, in my experience, it is gone in one day.
