Homemade Mayonnaise

Once you have had homemade mayonnaise you will never want to buy mayonnaise again. It can be used as a base for many delicious dressings, dips and sauces. It is very easy and satisfying to make. Here is the simplest version you will ever come across. I recommend using good quality olive oil but can experiment with walnut oil, almond oil, avocado oil or any healthy oils of your choice.

Ingredients

3 egg yolks

2 tsp dijon mustard

4 tbsp lemon juice

3 ½ cups olive oil

1 tsp salt

Method

In a large bowl add the egg yolks, mustard, salt, lemon juice and whisk together. Gradually, very SLOWLY, add the oil this will loosen the mixture slightly and give it a paler colour. Continue to gradually add the remaining oil, whisking continuously, very slowly until thickened.

Store in a sterilised jar in the fridge for up to one week.
